What makes morels so expensive?
Even during a good fruiting season, the combination of restricted supply due to their biology and high demand results in morel prices often reaching $20-$50 per pound at retail. In lean years, prices can skyrocket even higher for this sought-after delicacy.
Here are some factors that will lead to why the morel is so expensive:
- Short growing season - Morels have a very brief fruiting period of just a few weeks in early spring. This severely limits the supply available each year.
- Difficult to cultivate - Despite many attempts, morels have proven extremely difficult to cultivate commercially on a large scale. Most morels sold are from wild foraging.
- Labor intensive to harvest - Morels must be harvested by hand in the wild, often in remote or hard-to-access forest areas. This requires extensive time and effort.
- Unpredictable fruiting - The specific locations and timing of where morel fruiting bodies will appear varies from year to year based on soil conditions, temperatures, etc. This makes supply unpredictable.
- High demand - Morels are prized by chefs and food enthusiasts for their unique nutty, earthy flavor. This creates a consistently high demand for the limited supply.
- Perishable nature - Fresh morels are highly perishable with only a few days of shelf life. This restricts transportation and storage abilities.
What parts of morels are edible?
As long as the morels are fresh, firm, and have been identified as a true edible species, thoroughly cooking the entire mushroom from cap to base can be safely enjoyed. Proper identification is crucial, as there are some toxic false morel look-alikes.
All parts from the cap down through the stem are safe to consume after proper cleaning and cooking. When collecting morels, you typically want to cut them off at the base, just above the ground level, to retrieve the entire fruiting body.
The only parts that are inedible and should be avoided are any fuzzy, mold-like growths on the mushroom itself, as well as any extremely withered, dried out or rotting portions of older specimens.
